- Semolina coarse = 1/4 cup
- Flour = 1 cup
- Oil = for frying
- Baking soda = two pinches
Kachori stuffing ingredients
- Flour Papdi = 14 to 15

- Freshcurd= 1 cup well beaten
- Potato= 2 half boiled
- Sev Bhujia = half small cup
- Pomegranateseeds = half cup
- Greenchutney = 1/2 cup
- SweetChutney = 1/2 cup
Raj Kachori Recipe
- plainsalt= as per taste
- Roasted cumin = two teaspoons
- Red chilli powder = 1 teaspoon
- Cumin powder = as per taste
- Black salt = 1 teaspoon (to enhance taste)
How To Make raj kachori (recipe)
First of all, to make Raj Kachori, put semolina, flour and baking soda in a bowl and mix well.
Then knead it well with the help ofwater .
Note that the kneaded dough should be similar to the dough for puri.
The atta should be completely soft, for this knead the dough well.
Now take oil in a pan and keep it to heat.
While the oil is heating, make 14 to 15 balls of this dough.
Cover the prepared balls with a wet cloth so that they do not dry out.
Take the balls one by one and place each on a rolling pin and roll out into a diameter of about 3 inches.
As soon as the oil gets hot in the pan, turn the gas on medium flame and put the rolled puri in the hot oil.
Bake the puri well by pressing it with the help of a ladle so that it rises well and becomes the size of a kachori.
Make sure to cook the Kachori until it turns golden brown.
Similarly, roast all the puris.
You can keep the kachori on tissue paper to remove excess oil.
To make the Kachori filling, place the Kachori on a serving plate and carefully break its thin surface just a little.
In this Kachori, add 4 to 5 small pieces of potato, one dumpling, two spoons of boiled gram, red chilli powder, a little roasted cumin, plain salt, a little roasted cumin.
Now add curd, sweet chutney and green chutney on top.
And after this once again add cumin powder, red chilli powder, black salt, curd,chutneys, sev bhujia and pomegranate seeds to the kachori.
To make Kachori spicy, add a little red chilli powder, black salt, cumin powder, curd and both the chutneys.
